Dog (and people) friendly pupcake recipe

Being that Poppy is such a tiny dog, and is the center of my universe, it is really no hardship to feed her high quality food. …She is also extremely fussy, she eats dinner at night when we are getting ready for bed as she knows there is no chance of anymore treats today, and will spit out kibble if I try to hide it in her wet food!

I’m very strict about not giving her people food and have told house guests off when they think they know better! That said, she absolutely deserves homemade treats that are healthy and rewarding. These Banana Pupcakes 🧁 are inspired by Janes Patisserie, but with a vegan twist. We don’t keep eggs in the house so I replaced them by freshly ground flaxseed and the cream cheese frosting by whipped sweet potato. 
We also halved the recipe and used 12 mini cupcake cases instead as Poppy is quite mini herself. Bear in mind a cupcake is bigger than her head!

The headline ingredients in these Pupcakes 🧁 are bananas 🍌 and peanut butter 🥜. Both are a favorite snack of Poppy’s, together they are a double favorite! It is worth noting that artificially sweetened peanut butter can contain xylitol which is toxic for dogs so only use 100% peanut butter and be sure to check the ingredients.

The binding agent in these Pupcakes 🧁 is 50/50 wholemeal and coconut flour. Although widely used in dog biscuits, white flour is heavily processed and offers little nutrition to our four legged companions, wholemeal and nut flours are much better for them.  
Our Pupcakes were not the prettiest, baking without eggs and white flour is a little more advanced than we are at just yet, maybe cookies 🍪 would be easier 🤔 

Next Weekend we will be having a go at these delicious looking cakes by Jasmine Briones at Simple Sweet Vegan… Remember, dogs have 7 years to each of our years….thats 7 birthday cakes!

INGREDIENTS

12 mini Pupcakes
  • 1 Ripe Banana 🍌
  • 75g Peanut Butter 🥜
  • 1tsp Ground Flax Seed
  • 35g Honey 🍯
  • 25g Wholemeal Flour
  • 25g Coconut Flour🥥
  • 30g Rolled Oats
  • 1/2tsp Baking Powder
  • 75ml Water
Frosting
  • 1/2 cup sweet potato, boiled🍠
  • 1/4 cup coconut cream 🥥


INSTRUCTIONS

For the Frosting
  • Peel, chop and boil the sweet potato for 20 minutes and allow to cool.
  • Combine the cooled Sweet Potato with the Coconut Cream and beat until smooth.
For the Pupcakes
  • Mix the Ground Flaxseed with 3 tbsp hot water and set aside for a few minutes until gloopy.
  • Preheat your Oven to 180C/160C Fan and prepare 12 mini cupcake cases.
  • Mash the Banana in a bowl, add the Peanut Butter, Flaxseed and Honey and mix thoroughly. 
  • Add in the dry ingredients and mix to a thick paste.
  • Add in the water gradually until everything is combined.
  • Split the batter between the cupcake cases, and bake for 10-15 minutes until browned on top.
  • Play fetch while the Pupcakes cool fully, and remove them from their cases as it is difficult to do with paws. 
  • Spread over a teaspoon of Whipped Sweet Potato per Pupcake, and decorate with crunchy veg and crumbled dog biscuits.
Unlike our people dinner guests, our doggie dinner guests would never ask if we have ever seen the Netflix baking show ‘Nailed It’ when bringing out the cake!
